Oat Cashew Bars
Ingredients
1 cup date sugar (less if you don’t like sweet)
1/2 cup coconut oil + 1 teaspoon vegan lecithin
2 table spoons lemon juice
1/2 cup soy flour
2 cups quick oats
1 cup ground cashews
1/4 cup water
1/2 teaspoon vanilla
1/2 teaspoon salt
1/2 cup chopped pecans or almonds
Preparation
1. Combine all ingredients.
2. Mix and press 1/4″ thick on an oiled cookie sheet.
3. Bake about at 350 for 20 minutes.
4. Cut into shapes you like while still hot.
